Discover a journey dedicated to Culatello di Zibello, from the first bite to dessert.
24-month Culatello DOP, Vacche Bianche Parmigiano Reggiano, fried gnocco and pear mostarda open the experience. Followed by creamy Acquerello risotto with Culatello, Champagne and artichokes, and pecorino & Culatello ravioli. The star of the evening is 28-month “Bre del Gallo” Culatello, served with fried polenta, Parmigiano Reggiano fondue and black truffle. To finish, a delicious pear tart with chocolate ganache.
In the glass, three Extra Brut Champagnes are carefully selected to enhance each course.
