The family of Vergnano Castle has selected and collected dozens of prestigious and ancient batteries of Traditional Balsamic Vinegar of Reggio Emilia and has installed new ones since 1970.
Since then, with the musts of Trebbiano and Lambrusco of their vineyard, they govern production according to traditional techniques, following the advice of those who transmitted the passion and love for this unique and inimitable product.
Nowadays, “Castello di Vergnano” has 280 barrels of different woods and capacities; the vinegar is harvested annually from the barrels following strictly the procedures imposed by an ancient tradion.
Acetaia is located in the village, now called San Geminiano (Albinea, RE), where for multi-century tradition, the cultivation of fruit trees, olive (very rare in Emilia) and vines prevail: the hill on which the village rests, in the middle of a small valley, enjoys a favorable "microclimate" which guarantees an optimal maturation of the grapes they use for the production of "cooked must".
