Borgolab is an authorized Collection Center for the Borgotaro I.G.P. mushroom and an artisanal laboratory specialized in its processing.
It is located in Borgo Val di Taro, in the heart of the Parma Apennines, about 45 km from Parma. A place where the forest is a living culture, a tradition, and a gastronomic identity.
This is where a project takes shape, centered around a unique European excellence: the Fungo di Borgotaro IGP, a symbol of an extraordinary territory and of a supply chain monitored with rigor and passion. This wild mushroom, which cannot be cultivated, is a natural rarity: for this very reason, each batch is limited and numbered, an authentic expression of seasonal trends and the biodiversity of the forest undergrowth.
Inside the laboratory, processing follows artisanal methods that respect the raw ingredient. From slow drying to preservation in oil, and through the preparation of sauces, creams, and gourmet specialties, each product enhances the intense aroma and unmistakable texture of the Borgotaro porcini. Alongside the IGP line, Borgolab also selects fresh local mushrooms and varieties sourced from Italy and abroad, always guaranteeing expert and meticulous quality control.
The company’s retail outlet offers a wide range of specialties: dried porcini mushrooms in various selections, porcini preserved in oil, sautéed mushrooms, velvety creams, ready-made sauces, and dedicated recipe books. A true space devoted to the flavors of the forest, where tradition and innovation coexist in full respect of local gastronomic culture.
To discover the world of the Fungo di Borgotaro IGP up close, Borgolab offers guided tours of its collection and processing center, concluding with a tasting session. An experience that leads visitors from the history of the Protection Consortium to the laboratory processing stages, revealing how the forest becomes gastronomic excellence.
